5‑13 Chilling ratite carcases

(1) Ratite carcases must be placed in a chiller within 2 hours of stunning. (2) Chillers used for chilling ratite carcases or carcase parts must: (a) be kept closed except during: (i) loading or unloading of ratite carcases or carcase parts; and (ii) entry or exit of persons carrying out operations to prepare the carcases or carcase parts; and (b) be cleaned before hot carcases are placed in the chiller; and (c) as far as is practicable: (i) be clear of edible product during cleaning; or (ii) be cleaned in a way that prevents edible product becoming contaminated.
